Lasagne Matilde has three layers of yellow traditional lasagne sheets stuffed with two layers of Tagliatelle verdi al ragù (classic green noodles with meat sauce) and bechamel, topped with extra meat sauce and Parmesan cheese. The meat is only beef and it’s cooked with much more white wine than oil together with our signature aromatic ‘Romantic Salt’.
In 2014, after 5 years making the traditional recipe, we decided to create a modern version, taking inspiration from Strette alla Matilde di Canossa, a recipe for wedding banquets by chefs Clara Guermandi and Dina Alberghini from Buca S.Petronio, the restaurant run by our Family from 1970 till 2004 in the center of Bologna.
Looking for a complement in our menu, years ago we found this amazing focaccia from a natural park in Central Italy.
The dough is leavened 24 hours using only natural ingredients, water from the mountain springs and full of pure extra-virgin olive oil, then hand-stretched and baked in authentic Italian wood-fired ovens.
We started to import it and use it in our shop but combining it with our sauces, that were always simmering on the counter, was a match made in heaven.
Adding fresh produce from our kitchen like ricotta, our veggiez, aromatic herbs and a lot of others refinements … was the next step.
